Thai Crispy Chicken

Dear Readers

Thailand is known for it's street food among other things. One dish out of many others stands out for me is Thai Crispy Chicken. Once I got the knack of making it at home it was an easy road. It's so easy to make, so delicious that I bet once you try it you'll keep going back to it again and again.

So go ahead I'd say at least give it a shot.



Prep Time: 20 mins
Cook Time: 20 mins
Serving: 2 servings

Ingredients:

2 chicken drumsticks
2 chicken things
4 garlic cloves
3 tbsp soy sauce
1 tbsp coriander seeds
1 tsp white pepper
1 tsp chili powder
6 tbsp rice flour
6 tbsp corn flour
2 tbsp water
Salt to taste
Oil to fry

Garnish:
Fried Onions


Method:

Prepare the marinade by blending garlic cloves, coriander seeds, white pepper, salt and chili powder. (You could use a mortar and pestle for better results).

Take the chicken in a bowl and rub it thoroughly with the marinade. Keep it refrigerated for at least 3-4 hours.

Heat oil in a pan. Remove the chicken from the refrigerator, Add the rice flour, corn flour and water. It must become a batter like consistency. Make sure each of the chicken piece is coated well with the batter. Deep fry the chicken in the hot oil on medium flame.

Garnish with fried onions and serve with hot chili sauce.

Veg Kheema

Dear Readers

Today I also bring to you a very popular vegetarian dish. Veg Kheema. I've made it lots of times and every single time got priased for it. It's such a simple recipe but so hearty. I personally love how easy it is to churn up in my kitchen and it looks so much like restaurant style that it leaves me amazed.

So let's get on with this superb recipe.



Prep Time: 10 mins
Cook Time: 15 mins
Yields: 2 servings

Ingredients

2 Tbsp Ghee
1 Cup Onions  ( Finely chopped )
1 tsp Ginger Garlic paste
Tomato puree - ½ cup
¼ cup Peas (Steamed)
¼ cup Carrots (Steamed)
¼ cup French beans (Steamed)
¼ cup Grated Cottage Cheese (Optional: I normally don't use it but you could if you like)
Coriander powder - 1 tsp
Garam masala powder - 1 tsp
Red chilli powder - 1 tsp
Turmeric powder - ½ tsp
Salt to taste
To Garnish: Chopped Coriander leaves


Method:

Heat ghee in a pan, add onions and sauté it till it turns light brown. Add Ginger Garlic paste and sauté it for a minute. Add tomato puree and cook for a couple mins.

Add the peas, carrot and french beans,also the coriander powder, garam masala powder, red chili powder, turmeric and salt.

Cook for about 5 mins. Garnish with coriander leaves. Serve hot with naan or rotis.

Cheese Stuffed Chicken

I've been completely out of action for the past 2 weeks. Was down with a bad viral and thought it best to rest it out. Now that I am absolutely fine, what would I do first? Make an interesting recipe and share the recipe with you guys.

So today I will teach you how to make cheese stuffed chicken breast. It's healthy and tasty and quite simple to make. You can pan fry it or oven bake it.. your choice. But the end result will leave you wanting for more. Promise.

So let's get started.





Prep Time: 10 mins
Cooke Time: 15 mins
Yields: 2 servings

Ingredients:

 2 Chicken Breasts
1 tbsp Curd
1 tsp Chilli powder
1 tsp Garlic paste
1 tsp Ginger paste
Salt to taste
100 gms grated Cottage cheese
2 cubes Grated cheese
8 cloves Garlic cloves, finely chopped
1 cup Fresh basil, finely chopped
1 tsp Red chilli flakes


Method:

Preheat oven to 180°C.

Take the chicken breasts and slit it horizontally (butterfly cut).

Prepare the marinade by taking curd in a bowl. Add ginger, garlic paste, chili powder and salt. Rub this mixture on the top and bottom side of the chicken breasts and set aside for marination.

In a separate bowl, take grated cottage cheese, grated cheese, half of the garlic cloves, fresh basil, red chili flakes, salt and mix well.

Stuff this mixture into each chicken breast evenly. Press down the sides of the chicken breast and place it on baking tray.

Bake for 20-25 minutes or until chicken is easily pierced with a fork.

Alternatively, heat a greased pan and cook the chicken bresats on low heat on both sides for about 15 mins.


And there, you have a delicious and healthy dish on your plate. Enjoy.

Homemade Hot Chocolate Mix

My Dear Readers

I know it's not holiday season yet, but who doesn't like a good holiday gift. Today I'm sharing with you my recipe of a quick DIY Homemade Hot Chocolate Mix. You can make it and store it and use it whenever you or your kids wanna have a nice warm cup of hot coco (maybe with marshmallows). Trust me it's yum! It's a great gifting option as well. You can make it and put it a mason jar, team it up with some good looking coffee mugs. Throw them together in a basket lined with colorful napkin (maybe with some homemade marshmallows : promise I'll share the recipe soon). Don't forget to include a tag directing how to use it. And whola... there! You have created a beautiful cocoa bar as a gift. I must agree it's not my original recipe. I had read it a few years ago and I religiously use it.

So go ahead try it out. I bet you are gonna love it. (Make sure you use good quality ingredients, that's what makes all the difference)

Ingredients

1 cup grated bittersweet chocolate
1 1/2 cup castor sugar
1 1/3 cup cocoa powder
1 tsp instant coffee powder
1 tsp cornstarch

Method:

In a big mixing bowl, take the grated chocolate. Sieve in the sugar, cocoa powder,coffee and cornstarch. Mix it well with a whisk.

Store it in glass jars and enjoy whenever you are in a mood of some warmth.

Chicken Mushroom Soup

Today I share with you my recipe of a hearty chicken mushroom soup. It's so heartwarming to have this soup that it completely lifts your mood and makes you feel warm and fuzzy. It's a wholesome meal and does not require too many add ons. Whether you're sick or feeling low or just want to look out of your window to enjoy the view, it's one of those dishes that make you feel grateful and humble and happy. Try it, it won't let you down.





Prep Time: 10 mins
Cook Time: 40  mins
Yields: 2 servings


Ingredients

250 gm Chicken bones
1 medium onion diced
2 small cinnamon sticks
5-6 whole black peppers
1 bay leaf
2 small cardamom
2 tsp oil
Salt to taste
4 cups water
1/4 tsp fresh crushed balck peppers
1/2 cup sliced mushrooms
1/2 cup cooked shredded chicken
1 tbsp cornstarch slurry
Chopped spring onions to garnish


Method:

Heat 1 tsp oil in a thick bottomed deep pan. Add cinnamon, black peppers, bay leaf and cardamom and onions. Saute for a minute. Add the chicken bones and fry over low heat for a minute. Add water and let it cook for 30 mins. Strain this clear soup and keep aside.

In a separate pan heat heat the remaining 1 tsp of oil and stir fry mushroom and chicken with salt and crushed black pepper.

Add the clear soup to the mushroom and chicken mix over high heat and add in the cornstarch slurry.

Garnish with spring onions and serve hot.

Hummus

Dear Readers

Sorry to have been absconding from a few days. Busy with my kids’ school activities. But last evening I took time out to make my husband’s favorite snack... Hummus with Pita bread. All homemade and easy and quick to fix (of course if you've planned a little ahead and have some soaked chickpeas on hand). There are a lot of different ways people make hummus and honestly I won't say there is any one classic way. So let me share my recipe of this classic dish and hopefully you will find it interesting.




Cook Time: 5 mins
Yields: 4 servings

Ingredients:

250 gm soaked chickpeas (Boil and peel it for extra creamy hummus)
3 tbsp hung curd
1 clove garlic
Juice of 1 lemon
2 tbsp tahini (I use homemade tahini, will upload recipe soon, but store bought is just fine)
Salt to taste
4 tbsp extra virgin olive oil

Method:

Blend all the ingredients together till it forms a creamy paste. Garnish with paprika and extra virgin olive oil.

Serve it fresh homemade pita bread (recipe coming soon) and enjoy your evening.
